Fonio is a cereal originating from Africa. This cereal from the Poaceae family deserves its place in a diversified diet. In addition to being Gluten-free, Fonio contains vitamins, minerals and proteins. In cooking, it easily replaces traditional cereals such as rice and wheat.

Fonio is rich in 10 different protein-forming amino acids such as Leucine, Cystine, Methionine or Phenylalanine which are essential for the proper metabolism of proteins and, therefore, muscle health. Also, it can be included in the diet of vegetarians and vegans as a reliable source of protein. It is also a source of energy thanks to its Vitamin B1 and Phosphorus content. Its contribution of vitamin B2 and Magnesium improves muscle health. It contributes to good bone health thanks to the Calcium and Manganese it contains. It is an anti-stress food because it contains vitamin B3, which regulates steroid hormones. It is an effective preventative of anemia and its symptoms.

The glycemic index of fonio is relatively low (66) compared to white rice (73), for example. The glycemic index (GI) reflects how quickly the carbohydrates in a food are digested, converted and found as glucose in the blood. The more the blood glucose level increases following the consumption of a food, the higher the GI of that food. Over the years, numerous scientific studies have demonstrated that a low GI diet has a positive impact on health, including reducing the risk of type 2 diabetes, controlling blood sugar and cholesterol, controlling weight and reduction of cardiovascular risk.
